2 ripe peaches, halved and pitted

1 tablespoon olive oil or neutral oil, for grilling

1 bottle of Prosecco, chilled

4 sprigs of fresh rosemary, plus more for garnish

2 tablespoons honey or simple syrup, adjust to taste

Ice cubes (optional)



Preheat your grill to medium-high heat.

Brush the cut sides of the peaches with oil to prevent sticking. Place the peaches on the grill, cut side down, and grill for 4-5 minutes, or until they have nice grill marks and are slightly softened.

Remove the peaches from the grill and let them cool. Once cooled, dice them into small pieces. You can choose to peel the skins off the peaches if you prefer, but leaving them on adds color and texture.


In a small saucepan, combine the honey (or simple syrup) with 1/2 cup water and the rosemary sprigs. Bring to a simmer over medium heat, stirring until the honey is dissolved.

Remove from heat and allow the rosemary to infuse for about 15 minutes. Strain the syrup to remove the rosemary leaves and let it cool.


Divide the grilled peach pieces among the serving glasses. If you’re using ice, add it to the glasses now.

Pour about 1 tablespoon of the rosemary syrup over the peaches in each glass, adjusting according to your sweetness preference.

Gently muddle the peaches and syrup together to release the flavors.

Fill each glass with chilled Prosecco, pouring slowly to mix with the peach and rosemary flavors.

4. GARNISH AND SERVE:Stir gently to combine. Garnish each glass with a sprig of fresh rosemary
