Zucchini and Potato Patties Recipe

Zucchini and Potato Patties are a delicious and nutritious option for a light meal or snack. These patties are crispy on the outside and tender on the inside, perfect for serving with a side of sour cream or a fresh salad.

Ingredients:

2 medium zucchinis, grated

2 medium potatoes, grated

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs

2 large eggs, beaten

1/4 cup fresh parsley, finely chopped

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1/4 tsp baking powder

2-3 tbsp all-purpose flour (as needed)

Olive oil for frying

Instructions:

Step 1: Prepare the Vegetables

Grate Zucchini and Potatoes: Grate the zucchinis and potatoes using a box grater or food processor. Place the grated vegetables in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for achieving crispy patties.

Chop Onion and Garlic: Finely chop the onion and mince the garlic.

Step 2: Mix the Ingredients

Combine Vegetables: In a large mixing bowl, combine the grated zucchini, grated potatoes, chopped onion, and minced garlic.

Add Remaining Ingredients: Add the grated Parmesan cheese, breadcrumbs, beaten eggs, chopped parsley, salt, black pepper, paprika, baking powder, and 2 tablespoons of flour to the bowl. Mix well until all ingredients are evenly combined. If the mixture seems too wet, add an additional tablespoon of flour.

Step 3: Form the Patties

Shape Patties: Using your hands, form the mixture into small patties, about 2-3 inches in diameter and 1/2 inch thick.

Step 4: Fry the Patties

Heat Oil: Heat a generous amount of olive oil in a large skillet over medium heat.

Fry Patties: Carefully add the patties to the skillet, cooking in batches to avoid overcrowding. Fry each patty for about 3-4 minutes on each side, or until golden brown and crispy.

Drain: Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 5: Serve

Serve Hot: Serve the zucchini and potato patties hot, garnished with extra chopped parsley if desired.

Accompaniments: Enjoy with a side of sour cream, Greek yogurt, or a fresh salad.

Tips for Perfect Zucchini and Potato Patties:

Moisture Removal: Make sure to squeeze out as much moisture as possible from the grated zucchini and potatoes. Excess moisture will make the patties soggy.

Uniform Size: Try to make the patties uniform in size for even cooking.

Oven Option: For a healthier option, you can bake the patties in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through.

These Zucchini and Potato Patties are versatile and can be enjoyed as an appetizer, side dish, or even a vegetarian main course. Enjoy!
