Zucchini and Potato Patties Recipe

2 medium zucchinis, grated

2 medium potatoes, grated

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs

2 large eggs, beaten

1/4 cup fresh parsley, finely chopped

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1/4 tsp baking powder

2-3 tbsp all-purpose flour (as needed)

Step 1: Prepare the Vegetables

Grate Zucchini and Potatoes: Grate the zucchinis and potatoes using a box grater or food processor. Place the grated vegetables in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for achieving crispy patties.

Step 2: Mix the Ingredients

Combine Vegetables: In a large mixing bowl, combine the grated zucchini, grated potatoes, chopped onion, and minced garlic.

Add Remaining Ingredients: Add the grated Parmesan cheese, breadcrumbs, beaten eggs, chopped parsley, salt, black pepper, paprika, baking powder, and 2 tablespoons of flour to the bowl.
