Full of delicious, no fuss recipes and packed with fabulous videos – needless to say it’s well above my pay grade. And this chicken recipe (which I’ve adapted slightly*) is one of my absolute favourite’s from her site.
Ingredients:
3 lb chicken legs/wings
Cajun seasoning
Onion/garlic powder
Poultry seasoning
Chicken broth
Onion
Green bell pepper
Garlic
Salt
Pepper
Instructions:
Season chicken liberally to your taste and refrigerate for 1 to 2 hours up to overnight.
Preheat oven to 400°F.
Spread chopped vegetables on the bottom of a baking dish, place chicken on top, then pour 1/3 cup of broth in the bottom of the dish.
Bake uncovered for a total of 45-50 minutes. At 20-minute intervals, baste chicken with drippings in the bottom of the pan.
