Peanut Butter Cup Cake Roll Recipe


For the Cake:

3 large eggs

¾ cup granulated sugar

2 teaspoons brewed coffee or water

1 teaspoon vanilla extract

¼ cup unsweetened cocoa powder

¼ teaspoon salt

1 teaspoon baking powder

¾ cup all-purpose flour

For the Filling & Topping:

2 ounces cream cheese, softened

⅓ cup peanut butter

1 cup powdered sugar

1 teaspoon vanilla extract

4 tablespoons + ⅔ cup heavy whipping cream

7 Reese’s peanut butter cups, chopped (about 1 cup)

1 cup semi-sweet chocolate chips


Prepare the Cake:

Preheat your oven to 350°F (175°C).

Line a jelly roll pan with foil and coat it with cooking spray.

In a mixing bowl, combine the eggs, granulated sugar, brewed coffee or water, and vanilla extract.
